Some flavours stay with us, even as we move from place to place.

Originally from Aveiro, Paulo Leite found a home for his cooking in the Azores. Along the way, encounters, lessons and memories became part of his story, now returning to the table at À TERRA Ponta Delgada.

The Chef’s Journey was born from this path: three dinners in which the executive chef of Octant Ponta Delgada welcomes chefs he has worked with, bringing together the places that shaped his story and the produce of the archipelago.

Between 2015 and 2017, Paulo Leite worked with Chef Joachim Koerper and Chef Cintia Koerper at Eleven Rio. On 14 November, they reunite, this time at À TERRA Ponta Delgada, for the second dinner in The Chef’s Journey.

Memories of Rio de Janeiro cross the Atlantic and find a new expression through produce from the Azores. Dishes rooted in the chefs’ shared history are revisited in a menu created for this evening, in dialogue with Chef Paulo Leite’s cooking and the place that now inspires it.

Barra de Ouro meets Azorean pineapple. Brown crab is paired with passion fruit and coconut. Between familiar flavours and new combinations, the reunion takes shape at the table.

This tasting menu marks the end of a journey through the memories, places and people that are part of Paulo Leite’s cooking.

After Aveiro and memories of Ricardo Costa, this final gathering revisits Rio de Janeiro. The destination is the table at À TERRA, on Ponta Delgada.
